It’s seriously so easy, and kind of a ‘lazy’ version of my favorite pickle chicken salad that so many of you have really loved. It’s perfect for days when you want minimal chopping and cooking (fewer dishes) but still want to enjoy something super fresh and yummy.

If you can’t find it though, don’t worry. You can definitely make this pickle chicken salad recipe for a similar taste, and it still has good macros.

Tasty Chicken Salad: Pickle De Gallo Chicken Salad
Here’s how you can make this tasty chicken salad.
Ingredients (serves 10)
• 2.5 lb cooked white chicken rotisserie or grilled (1120g)
• 14 oz container of Pickle De Gallo® 400g
• ½ cup low-fat Greek yogurt 120g
• ¼ cup lite mayo 60g
• ¼ cup yellow mustard 60g
• ¼ cup sweet relish 60g
• 10 oz bag shredded cabbage 284g
• 1 ½ tsp. kosher salt
• ½ tsp. black pepper
Instructions
1. Chop or shred your chicken well and add to a large bowl with the rest of the ingredients.
2. Toss and stir very well to get everything combined. Store in the fridge all week for lunches and snacks!
3. I love to eat this on rice thins/cakes or, of course, our favorite chips or crackers. It’s also delicious on a piece of toast or stuffed into a toasted pita.
Notes
This is an extra easy version of my original favorite pickle chicken salad, for those days you really don’t want to chop anything! I added cabbage because I could just open the bag and throw it in, but celery would maybe be a more traditional and yummy option! I also love lots of green onions and fresh dill!
