Air Fryer Shrimp and Vegetables

When you’re rushing to get dinner on the table, you can air fry shrimp, zucchini, and carrots for a quick, flavorful meal. Pair with a green salad to meet your nutritional and taste needs for a satisfying dinner.

- Shrimp: Look for shrimp labeled 26/30. That means there are 26-30 shrimp per pound.
- Lemons: Fresh lemon juice helps ramp up the bright flavor in this dish.
- Olive Oil: The small amount of olive oil balances the acid in the lemon juice and helps the seasonings coat the shrimp and vegetables.
- Lemon-Pepper Seasoning: This usually contains lemon zest, black pepper, garlic, and a combination of spices like oregano, thyme, celery seed, and cayenne.
- Spices: Garlic powder, paprika, and a small amount of salt help round out the flavor.
- Vegetables: Cut them into similar sizes so they’ll cook at the same rate.
Lemon-Pepper Air-Fryer Shrimp and Veggies Recipe
Ingredients (makes 2 servings)
- 10 oz. fresh or frozen extra-large shrimp in shells, thawed if frozen, peeled, and deveined
- 2 lemons
- 1 Tbsp. olive oil
- 1 tsp. salt-free lemon-pepper seasoning, such as Mrs. Dash
- ¼ tsp. salt
- ¼ tsp. garlic powder
- ¼ tsp. paprika
- 1 small zucchini, halved lengthwise and sliced 1/4 inch thick
- 2 medium carrots, sliced
Directions
- Thaw shrimp if frozen. Rinse shrimp; pat dry.
- Preheat air fryer at 400°F.
- Combine Ingredients
- Squeeze 3 Tbsp. juice from one of the lemons; cut the remaining lemon into wedges.
- In a large bowl combine lemon juice and the next five ingredients (through paprika).
- Add shrimp, zucchini, and carrots; toss to coat
- Cook in the Air Fryer
- Using a slotted spoon, transfer shrimp mixture to air-fryer basket.
- Cook 9 to 11 minutes or until shrimp are opaque, stirring occasionally.
- Serve with lemon wedges.
